Chicken Burrito



Ingredients: Chicken

  • 400g free range chicken breasts or tenderloins, sliced
  • 1-2 shallots, finely diced
  • 2 capsicums, one green and one red, diced
  • 1 can chopped tomatoes
  • 1 tablespoon each of tomato paste and crushed garlic
  • 2 teaspoons coriander powder, cumin powder, smoked paprika and cayenne pepper (optional)
  • Chipotle chillies in adobo sauce (optional)
  • Salt & pepper

Ingredients: Wrap

  • 80g lupin flour
  • 4 egg whites
  • 4 tablespoons Woolworths Gentle Fibre mix
  • Water
  • Salt & pepper
  • 1 serve low fat cheese
  • Spinach






In a hot saucepan fry the meat without oil until browned, before adding all other ingredients plus one cup of water.
Simmer gently until the sauce has thickened and slightly caramelised around the edges of the pan.

To make the wrap, mix all ingredients together in a bowl until well combined. Season well and pour 1/4 of the mixture into a greased frying pan and move the pan or use a spatula to spread the mixture
around evenly. Cook for 3 minutes on one side, flip and then cook for 2 minutes on the other.

Serve with one low carb wrap, spinach and a small amount of cheese.
